Build a better bar: Let’s talk tequila & the rum rebellion

Any home bar owner would benefit from having tequila and rum on their shelves, but these spirits can be a mystery for some. Discover our top selections from the wide varieties on offer and enjoy something different this weekend.

Let’s talk tequila

Almost all tequila is produced in the Mexican state of Jalisco; only a few other Mexican municipalities have permission to produce it. Tequila is a mezcal made from the blue agave, or agave tequilana plant, not a cactus, which is a common misconception.

Much like whisky, the ageing process has a significant impact on the flavour profile of tequila. The average blanco (white) tequila is aged in oak barrels from zero to two months. The reposado, which means ‘rested’, is aged from two months to one year. Lastly is the añejo, which spends one to three years ageing. As tequila ages, it becomes oaky and more mellow in flavour – something to keep in mind when choosing for your bar.

Casamigos Blanco

A premium tequila made in small batches and rested for two months. The taste is crisp and clean with hints of vanilla, citrus and sweet agave.

Patrón XO Cafe Tequila

An extraordinary blend of ultra-premium Patrón Silver tequila and the pure, natural essence of fine coffee. The taste is dry and not as sweet as other coffee liqueurs.

Espolon Tequila Reposado

This tequila is aged in American oak barrels and made from 100% pure blue agave with notes of sweet tropical fruit.

Jose Cuervo Especial Tequila

This drop credits its colour and distinct orange and cinnamon flavours to the extended time spent in quality American oak, making it a versatile all-rounder.

The rum rebellion

It’s best to keep two varieties of rum in your home bar – a light rum and a dark or spiced rum. Light (or silver/white) rums are aged – for at least a year – in stainless steel casks to keep their colour clear. They have little flavour aside from general sweetness, which makes them a go-to for most cocktail recipes.

Dark rums mature for two or more years, typically in old bourbon barrels, where they get their colour and flavours. For spiced varieties, flavours are infused slowly to give a prominent aroma and taste.

Bundaberg Small Batch Spiced Rum

Premium spiced rum from Bundaberg blended with aged reserves and mellowed in heavily charred American Oak barrels.

Bacardi Superior Rum

This rum is distilled using white oak barrels for distinctive character, with notes of vanilla and almond.

Bundaberg MDC Small Batch

A handcrafted, small batch rum that won the World’s Best Dark Rum at the World Drinks Awards London 2017.

Rum Co Fiji Bati Spiced Rum

This well-rounded spiced rum won a Silver Medal at the International Wine & Spirits Competition 2015.
