Let’s talk tequila

Almost all tequila is produced in the Mexican state of Jalisco; only a few other Mexican municipalities have permission to produce it. Tequila is a mezcal made from the blue agave, or agave tequilana plant, not a cactus, which is a common misconception.

 

Much like whisky, the ageing process has a significant impact on the flavour profile of tequila. The average blanco (white) tequila is aged in oak barrels from zero to two months. The reposado, which means ‘rested’, is aged from two months to one year. Lastly is the añejo, which spends one to three years ageing. As tequila ages, it becomes oaky and more mellow in flavour – something to keep in mind when choosing for your bar.

The rum rebellion

It’s best to keep two varieties of rum in your home bar – a light rum and a dark or spiced rum. Light (or silver/white) rums are aged – for at least a year – in stainless steel casks to keep their colour clear. They have little flavour aside from general sweetness, which makes them a go-to for most cocktail recipes.

 

Dark rums mature for two or more years, typically in old bourbon barrels, where they get their colour and flavours. For spiced varieties, flavours are infused slowly to give a prominent aroma and taste.
