In your large blender cup add:

Chicken Schnitzel
• 2 chicken breasts (200-250g each)
• 1 egg
• 1/2 cup panko breadcrumbs
• 1/2 cup flour
• Salt and pepper
• Oil for frying
• Flaky salt, for seasoning
Charred Corn, Cucumber, and Chili Salad
• 2 ears of corn
• 1/2 red onion, finely diced
• 1 cucumber, diced
• 1 red chili
• 100g Greek feta cheese, crumbled
Dressing
• 1 tbsp olive oil
• 1 tsp honey
• Juice of 1/2 lemon
• Freshly ground black pepper, to taste
Garnish
• Fresh coriander leaves
Method
1. Butterfly and lightly flatten the chicken breasts. Season the chicken with salt and pepper. Then place flour, beaten egg, and panko each in separate dishes. Coat the chicken in flour, dip in egg, then coat with panko. Shallow-fry in oil at 180°C until golden and crispy, then season with flaky salt.
2. Char the corn over an open flame or with a blowtorch, then cut the kernels off. In a bowl, combine the corn, cucumber, chili, and red onion. Whisk together the olive oil, honey, lemon juice, and pepper, then toss with the salad. Crumble feta over the top.
3. To serve, place the salad on top of the schnitzel and garnish with coriander leaves.
